This is a wonderful dish that your family will ask for over and over. It is so good!
INGREDIENTS:
4 pieces of cod, thawed if frozen
Salt and Pepper
Lawry’s Garlic Salt
4 large Basil leaves: Chiffonade
Lemon wedge
Place the Cod in an 8×8 baking dish and season lightly, on both sides, with the salt, pepper and Lawry’s seasonings. Sprinkle the shredded basil over the fish and give each piece of fish a light squeeze of lemon. Cover with wrap and place in the refrigerator until the cheese mixture is ready.
CHEESE MIXTURE:
1/4 Cup of chopped green onion
1/4 Cup Mayonnaise
5 Tablespoons Butter
Dash of Cholula Hot Sauce: Original Recipe
3/4 Cup Grated Parmesan Cheese
Pinch of Salt and Pepper
Pinch of Lawry’s Garlic Salt
Pinch of Dried Dill
Juice of 1 lemon Wedge
Blend everything together with a Spatula. Do not use a blender or mixer, as it will over-mix. Chill for 15-20 minutes.
LET’S MAKE FISH:
Gently spread the cheese mixture on each fillet
Place the dish in a pre-heated 425 degree oven
Bake until the cheese mixture begins to melt
Increase the temperature to Broil.
Broil the fish until there is some light color on fish and/or the fish begins to pull apart slightly.
Remove the fish from the oven and let it rest for a few minutes before serving.
