Ingredients:
2 Ciabatta rolls. Cut in half to make 4 slices.
1/2 Onion: Sliced in rings
1 Tomato sliced in 1/4 inch rounds
6 ounces English White Cheddar Cheese
2 Tbsp melted butter
Grey Poupon Mustard
Lawry’s Garlic Salt
Paprika
Salt and Pepper
Bake:
Pre-heat a pizza stone or pan in a 400º oven.
Butter the cut side of each Ciabatta and sprinkle liberally with Lawry’s Garlic Salt, Paprika and Salt and Pepper.
Place the buttered side down on the hot surface until a ‘light-brown’ color is achieved. Take the Ciabatta out of the oven and cool, seared-side up.
Place a light spread of mustard on each half
Layer onion rings, one tomato slice, and liberal cheddar cheese over each half.
Place the Tortas back into the oven and bake until the the cheese melts. I like to finish the cheese under the broiler for color
Remove from the oven and allow to cool before eating.

I also use this Ciabatta as a base for open-faced Sloppy Joes and Tuna Melts.
