This recipe has been published and re-published may times over the years because it is so good! My version varies only slightly from the original.
Ingredients:
1 Unbaked 9-inch pie crust ( I use refrigerated Pillsbury crust)
1 Cup of light corn syrup
1 Cup of firmly packed light brown sugar (Original uses dark brown sugar)
3 Eggs, slightly beaten
1/3 Cup of melted butter
1/2 tsp of salt
1 tsp vanilla
1 Cup of pecans (whole or halves)
Directions:
Heat oven to 350 degrees
In a large bowl, combine the corn syrup, sugar, eggs, butter, salt and vanilla; mix well. (I do like to use a whisk to insure a good blend)
Pour the mixture into the unbaked pie crust.
Sprinkle the pecans on top.
Bake for 45-50 minutes, or until a center toothpick comes out clean. Oven temperatures can vary, so watch it near the end.
Remove from oven to a cooling rack.
Hint: To insure that you don’t burn the crust, use a metal pie guard or cover the edge with aluminum foil.
